Oh Happy Day…
Do you ever wake up with a pep in your step? A smile on you face? Feeling like you could just take on the world? Admittedly, I am a morning person and feeling like I could conquer the world comes pretty easily to me during those few precious, early morning minutes of peace and quiet before the rest of the house wakes up.
These scrumptious blueberry muffins are packed with antioxidants, whole grains, and natural sugars keep me going until lunchtime and might just turn you into a morning person.

Ingredients:
- 1 3/4 cup whole wheat flour
- 1/3 cup old fashioned oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 olive oil
- 1/2 cup honey (maple or agave syrup work well, too)
- 2 egg whites
- 1 cup plain Greek yogurt (nonfat or full fat)
- 2 teaspoon vanilla extract
- 1 cup fresh blueberries
- turbinado sugar
- Preheat oven to 400 degrees Fahrenheit. Unless using non-stick, grease all 12 wells in a standard size muffin tin. Cooking spray or butter work well.
- Mix all dry ingredients in a medium size bowl
- Mix wet ingredients. I usually mix them in a large measuring cup to keep life simple
- Gently add the wet ingredients to the dry ingredients. Overmixing will result in gummy, tough muffins.
- Fold in the blueberries.
- Fill each muffin tin about 3/4 of the way and sprinkle about 1/4 turbinado sugar on top.
- Bake for 16-19 minutes.
Enjoy with a nice warm cup of coffee or tea. These muffins freeze well and also pack well for a quick snack or school lunch.
